Hokkaido Winter Itinerary: 7 Days of Snow Festival, Onsen and Seafood
Deep-winter Hokkaido built around the Sapporo Snow Festival: three nights of snow sculptures, miso ramen, and the Otaru canal under lantern light, a steaming onsen night at Noboribetsu, and two nights in Hakodate for the night view and the morning market.
February is Hokkaido at its snowiest: close to a metre of snow on the ground in Sapporo, steaming outdoor baths, and the Sapporo Snow Festival, when Odori Park fills with snow sculptures, the biggest more than 10 metres tall (February 4 to 11 in 2027). This 7-day route flies into New Chitose and works south: three nights in Sapporo for the festival, the food, and a day trip to Otaru's gas-lit canal, one night soaking at Noboribetsu Onsen while Hell Valley steams in the snow, and two nights in Hakodate for the view from Mt Hakodate and a seafood breakfast at the morning market.
Two timing notes matter. Start between February 4 and 9, 2027 to catch both the Snow Festival and Otaru's Snow Light Path (February 6 to 13), and book Sapporo rooms as early as you can: festival week sells out. And winter here is properly cold, with highs around 0°C and nights around minus 6, so the itinerary alternates outdoor hours with long dinners and hot water. During the Snow Festival, Odori Park's blocks fill with snow sculptures, the biggest more than 10 metres tall, alongside about 80 smaller ones built by local residents (the 2026 count). Come from late afternoon: the sculptures are lit until 10 PM, and one of the big ones becomes a projection-mapping screen after dark. Outside festival week the park is a quiet white strip through the city, still worth the walk

Susukino ice sculptures and miso ramen
The festival's Susukino site lines Ekimae-dori from Minami 4 to Minami 6 with about 60 ice sculptures, some with fish frozen inside, open until 11 PM. Then walk to Ganso Ramen Yokocho, a narrow lane of about 17 small shops serving bowls since 1951: Sapporo miso ramen is rich and oily, often topped with sweetcorn and butter

When is the Sapporo Snow Festival, and how far ahead should I book?
The festival runs for about a week every February; the 2027 edition is February 4 to 11. Odori Park and the Susukino ice sculptures run all eight days, entry is free, and the Odori sculptures are lit until 10 PM. Sapporo hotels for the festival window sell out months in advance and rates roughly double, so book as soon as your dates are fixed. Book the Noboribetsu night early too: Lunar New Year falls on February 6, 2027, in the same week.
How cold is Hokkaido in February, and what should I pack?
In Sapporo, February highs average around 0°C and lows around minus 6, colder on clear nights, with snow on the ground the whole trip; Hakodate is a degree or two milder. The non-negotiables are waterproof boots with grip (the packed snow on Sapporo's pavements is genuinely slippery), a proper down jacket, and gloves you can use a phone with. Indoors everything is heavily heated, so layers beat one huge sweater.
Can I add skiing to this itinerary?
Yes. Sapporo Teine is about 40 minutes from central Sapporo by car, or take the JR train to Teine Station and a 16-minute bus; it works as a day trip if you swap it for the Otaru day. For a proper powder stay, add two or three Niseko nights after Sapporo; winter ski buses run to Niseko from both New Chitose Airport and Sapporo. This route as written needs no ski gear at all.
Why end in Hakodate instead of returning to Sapporo?
It turns the itinerary into a one-way line with no backtracking. Hakodate Airport is 20 minutes from the station by shuttle bus, with direct flights to Haneda, and the Hokkaido Shinkansen runs from Shin-Hakodate-Hokuto, 20 minutes out of town on the Hakodate Liner, to Tokyo in about 4 hours, so you leave from where you finish. Winter suits Hakodate, too: the cold air often gives the clearest night views of the year, and last winter lights traced the outline of Goryokaku's star-shaped fort every evening from December 1 to February 28.
